We believe freeze dried acai berry products are the best and spray dried products should be avoided. The spray dry process involves heating the acai berry to a very high temperature. The high temperatures destroy many of the nutrients in the fruit. Think about milk. Ulta-pasteurized milk has less nutrients that regular pasteurized milk. The process of ultra-pasteurization involves higher temperatures. The milk company gets a product with a longer shelf life but you end up with a product with less nutritional value. The nutritional discrepancies are much more substantial with the highly perishable acai fruit.

The process of spray drying involves heating the acai to high temperatures to remove the water and then, spraying the Acai with carry-agents such as maltodextrin.

Ultimately, a large amount of the "spray dried acai powder" is probably maltodextrin.

Maltodextrin is added during the manufacturing process and it technically does not need to be listed as an ingredient on the label due to a loophole in FDA labeling laws. Maltodextrin is a product of the manufacturing process and is not technically an "added ingredient", so it is not required to be listed on the label.

The bottom line is that spray dried acai powder is cheaper to make and cheaper to buy but … the better "freeze drying process" uses low-heat, introduces no carry-agents and allows all the nutrients of the acai berry to remain intact.
