Freeze Drying Acai and

The idea behind freeze drying a food product is to remove the water from a substance, in this case the acai fruit, while keeping the nutritional structure of the food item intact. With the water removed, the food will not degrade or spoil for a long time. The freeze dried food can be "reconstituted" when the freeze dried powder is mixed with a liquid.
Freeze drying is a method of removing the water from the substance without damaging the properties of that substance. The idea is to add just enough heat to turn the frozen water in the material into vapor without doing any damage to the substance.
1) Freezing
This part of the process simply means freezing the substance. This is done on a small scale using a "shell freezer" or on a larger scale using a special machine.
2) Primary drying
The substance is heated in order to "sublimate" the water. Sublimation is turning a solid to a gas while bypassing the liquid stage. In this part of the process about 95% of the water in the material is removed.
3) Secondary drying
This next drying phase is done to vaporize the water molecules that were absorbed during the initial freezing.

Provided that the freeze-dried substance is properly sealed moisture should not be re-absorbed. Then the material can be stored at room temperature without refrigeration and remain intact for many years with no danger of spoilage. Once the sealed package is opened it should be refrigerated.
